Sorry for not getting back to you sooner, over the last week I've been out of action (I've been sick) and I'm still no 100%.
Do you have a "Standard" category chosen for the category module and if so does that category have products in it?
If not what you can do is to make a (sort of) feature products category and link that to the module.
So now what will happen is when the use goes back to the 'categories' page they will be presented with the products you have specified and shouldn't be empty any more.
I hope I've understood you correctly here, my head is still spinning :-(
