This is off the top of my head, so forgive me if some things are named a little differently etc.:

Most of NB Store is templated and for the product views u can alter the produtlist.template and the productdetail.template, those will have the "Retail", "Sale" and other marking to be displayed for the prices and also the "Buy"-text for the buttons can be altered there.

The address collector however is not templated and the way to go for altering that, would be to alter the program code itself.

For the minicart, u can enter their properties thru the module itself by choosing settings and go to the cart settings tab; Then tick or untick boxes like "Show discount column", the cart module works the same way.
