There's a back office disableprices.flag setting that hides the prices, but doesn't hide the models selector (which shows prices on the radio buttons) so if you have products with multiple models, then you'd need to do something more drastic and modify the list and details and minicart templates and remove what you don't want.

There's also a setting in the checkout module that lets you skip the first stage. That may help a little.

You can also modify the checkoutaddress.template and remove anything you don't want.

In the latest release, CSS classes are added to the checkout fieldset tags. This allows you to use display:none to easily hide various sections through the stages, but you can't get rid of the stages altogether unless you modify the source and make a new module.

You might also need to get creative with CSS to hide other pricing info in the checkout. You might find you have to modify checkout.ascx and cartlist.ascx to get the result you need.

Ultimately it's designed to be a shopping cart, so turning it into a catalogue with ordering and without prices is going to be a bit of a hack.. but it is doable.
