Try that [Category:CategoryDesc] again in the productlist template but also apply a default category in the list settings. See if that brings it in. To speed up checking, just copy and paste all of those category tokens into the list template at once and see what, if anything, comes through.
The problems are that products can be in any number of categories and in list view that adds up to even more. However Dave did modify it a while back so that it could show a single category so long as there is a default.. but I don't know if that extends to that single line description field.. I'm guessing not, but try.
Otherwise.. what was wrong with using the rich text field? You can put anything you want in that and wrap it in an H1 tag.
