If you apply a stock value to a product model then it will count down as the model is purchased.
There are some settings in the checkout and product list modules for various stock options. Check those.
Cancelled orders put items back into stock, including when a customer cancels.
There are also scheduler options to determine when an items is added back to stock if the order is not cancelled. Those settings are in the Back Office and you need to have the scheduled task configured in DNN. Look in Back Office > Admin > Help and search there for stock and schedule to find a range of info.
