The issue is that the weight is not stored at the product level. It is stored at the model level.
Model data such as this is not available to the list template because a product can have dozens of models and can't distinguish between them.
If you must display an additional value in the list view then it must be at the product level. You could create a custom field for the purpose and would then need to enter the weight value into that field as well.
I'll remember this issue for the new store module. We should be able to extract just the first model's data for the list view and ignore the rest. The new store is not ready for production yet so you'll need to come up with something for the current version for now.
