Note also that Dealer prices are hidden from the public so you could possibly use the built in dealer role and dealer pricing to have prices only on certain products, but it all depends on what your criteria for not showing pricing on some products are.
If you just don't want a price on a given product, make it zero.. although you might then also need to modify the templates because the zero price will normally display an email for price message.
Nearly everything is done through functionality that is exposed in the productlist and productdetails templates. You will need to get your hands dirty in there if you want custom functionality.
