Doing it at the product level is effectively like wiping the entire product database to replace it with a new one. It would be possible, but in the database it's like a new catalogue with new products each time and nothing in orders would match up any more.
At best, one could export the entire store through the BO export facility, modify the exported XML, and the clear down the store, and reimport everything again. But I think that's just creating a nightmare. I would use a different store if it had to retrieve all product data, including adding and removing products each time, from a separate database.
It's a problem with many offline stores already having stock databases and wanting them to automatically be published online. It's just not there at this level of development.
At the model level, the import checks for model codes and modifies the existing data, so it's much more solid.
