What John means is a progressive filtering menu rather than a category menu. The old store can't do this, although I recall someone did make a category menu with checkboxes once but it stopped working in later DNNs.
The new store does have this feature even though you can't see it in the demo. It uses a secondary set of categories that act as product attributes for the purpose of filtering.
But be careful when planning the structure of products and options because some people might expect to find a shoe they like first and then choose the size on the product page. I would normally apply sizes as models or options depending on whether stock matters.
If the store is a big one and the job has a proper budget then you might want to concentrate on getting the right software first.
