You are correct, the search uses the 'productlist.template'

This template can be found in the backoffice...

BO > Utilities > Templates > Catalogue > Products > 'productlist.template'

If you want the search results to look different than the shop, you could create a new page "Store Search" for example, place a new ProductList module and create a new 'productlist.template' (searchList.template for example) the set the search module to point to the new page.
