What u r looking for is the sequence of events that goes like this:
Customer select products and go to checkout, then go thru the addr collector and selects a shipping method.
Then instead of selecting a payment method, the customer gets a msg on screen that says that confirmation is pending and he will receive payment instructions as soon as the order has been confirmed.
If so, u could omit the payment step totally and in the confirmation template, u add information about which PayPal account they shd transfer the money to.
Now when u confim the order, the confirmation is sent to the customer and in there the customer can see the email address he shd transfer the money to using PayPal.
Ofc that requires the user to log on to his paypal acct and do the transfer manually.
