Regarding the actual functionality you want to build, I suggest looking much more closely at the typical functionality of 'web to print' services, before coming up with the feature set. I have a client with the same needs and we looked into how it could be done with NB Store and then also at the commercial web to print applications, and there was a heck of a lot more involved than just a few extra fields and an upload facility, which NB Store already supports out of the box.
In particular, the real web to print apps allow the print company's business clientele to upload their resources (info and graphic files), keep them up to date, and order repeated and new material with selected info and files. A typical scenario is ordering repeat sets of business cards, but for new employees or with something like a phone number changed. Your post touches on that area already.
Also relevant was that the print business needed all the resources to be managed along with the same type of material provided by non-web customers. Otherwise they end up with multiple systems for the same work.
The main point I'm making is to examine other products designed for the purpose to ensure that anything vital is not overlooked.
