New Post: what is the language used for sending Order Email ?

Hi I have a problem, web site in Italian and English languages.
I make an order and I send an Email, I need that my email is in italian but arrive in englis language.

The setting That I have made is : merchant.culture : it-IT
What is the order email culture?
