New Post: Step 3 Skip or adjust

I prefer to skip step 3 in the checkout process because my customer wants to use the store as an cataloque where you can ask for prices after leaving your adress etc. Is that possible?

And when that is not possible: how can I adjust step 3 so that I only see the option for payment by cheque and not by creditcard / paypal.
