Ok, if you have lockstockoncart enabled in the back office then a product that has been added to someone's basket won't be available to purchase.
In your case, where products are unique but sales are unlikely to overlap, I would treat purchasing as 'first person through the checkout gets the item' and not use lockstock on cart.
If stock does need to be very tightly controlled and released back to the store when someone leaves an item in cart, then there are some other BO settings and a schedules task to tighten it up.. but go with the former suggestion here.
