Models are for stock. Options are for extras that can be charged but do not have stock.. e.g. gift wrapping.

When you say 20 t-shirts all the same model, but 10 are white... then you're actually saying they aren't the same model. Ten are the white model.

You can have any number of models per product and each model has stock.

You are also not restricted to a single product to list your items. You can also use additional products and also categories.

If, for example, there would be too many models of a given product type, then consider splitting the product into multiple products, or even into additional categories. e.g. one could have all shirts in one product with colours as models, or one could have them in white shirt and black shirt products. There are many ways to do it and some careful thought needs to go into the best way to do it for your products and customers.

Note also that there is a product copy button in the back office. You can create products as product templates which have a lot of the modules or options already created and then copy them as new products. This can save having to recreate some things over and over again.
