Hard to say without knowing what the products are and how you market them. However, I can tell already that the Adwords adverts must be misleading or inaccurate because of the high bounce rate.
And again, if people stop when they see the checkout, then question what they are seeing at that point.. maybe they don't like the shipping fees... is it just the 21% VAT or is more added.
I'm assuming you aren't requiring registration for purchasing. That might put people off depending on the type and value of the product.
And of course, the question about whether a given payment gateway such as PayPal can put buyers off. That is not an issue like it was 10 years ago, however I always make sure I state somewhere that a PayPal account is not required when paying by credit card. I have a PHP cart site that does loads of business and uses PayPal Express. The checkout is convoluted and requires site registration, but no one complains and sales are high. I've also had no complaints about PayPal on NB Store and it is very straightforward on that.

Also,.. I'm assuming you're not using some dodgy SEO marketing company that builds up fake traffic through sweatshop workers and bots. How legitimate is the traffic in the first place. It's easy to create traffic but hard to create sales.

You might consider an exit popup to ask people for feedback.. maybe get them to just tick some boxes.. e.g. Price too high, Shipping too high, Wrong product etc.
